Cucumber Radish Salad
Cucumber Radish Salad is fresh, creamy and crunchy. The combo of fresh cucumbers, radishes and boiled eggs not only bring a crunchy texture, but also a beautiful vibrant color to this salad. This is an all-time favorite family recipe!

This salad is an all-time favorite in our family. It’s great for last-minute prep and always loved by everyone. It consists two of my all-time favorite vegetables: cucumbers and radishes. Both of these vegetables are healthy and full of vitamins. It is really easy to make and has the most common ingredients. It works great with anything, whether as a snack along with a slice of fresh bread or a side dish. It’s a quickie with combination of yummy ingredients.
For this salad, you can use the Benriner Mandolin and its coarse blade to slice cucumbers, radishes and eggs in matchsticks – thin and fast. You can also chop manually and grate boiled eggs onto large hole of grater. Dress into mayo just before serving as mayo tends to slide off the veggies after standing for a while. Remember – fresh salads are always the best in taste!
Cucumber Radish Salad Ingredients:
- English cucumber or 3-4 smaller cucumbers
- Green onions
- Bunch of fresh organic radishes
- Hard-boiled eggs
- Real mayo for dressing
- Salt to taste, optional
How to Make Cucumber Radish Salad:
1. Wash and paper towel pat dry cucumbers, radishes and green onions. Cut off stems and tails from radishes.
2. Cut 3-4 small cucumbers into half (or 1 English cucumber into quarter) and slice onto Benriner Mandolin. Add to the large bowl. Cut radishes into half and slice them onto mandolin or manually with a knife. Grate 5 boiled eggs onto the large hole of grater and finely chop 5 green onions.
3. Gently mix all ingredients with a spoon.
Add real mayo and salt to taste if needed (I rarely do) and toss to coat, just before serving. Garnish with green onions, dill or parsley for final touch.

I know you said mayo to taste… but I LOVE mayo and am afraid I will overdo it… give me a guideline please!

Cindy, it’s hard to tell exact amount. If you like it more creamy, add more, if not as much, add less. You just want the veggies to be covered in mayo. For the whole serving, maybe start with 2-3 tablespoons. Way too much mayo would also run off salad faster in not serving right way. Hope this helps 🙂
