This salad is a very old recipe and very basic. I remember this salad all the way back from childhood. Every wedding, every event had this salad on the menu. It was very common and very popular decades ago and the tradition continues until this day among Ukrainian families. It’s super good, so easy to make and has the most common and easy-to-find or already-on-hand ingredients. This salad goes well with any meal or even a slice of homemade bread. Another great reason why I love this salad so much is that I can marinate it a day before any event. With Thanksgiving and Christmas coming up, you can make this salad the night before, marinate it and refrigerate it. Come next day, gently stir it once again and taste for any additional salt needed just before serving.

Green Cabbage Cucumber Salad Ingredients:

  • 1 medium green cabbage (2 lbs) – shredded
  • 3 medium cucumbers (or 1 English cucumber)
  • 4-5 green onions
  • 1 bunch fresh dill (about 2 tablespoons chopped)

DRESSING INGREDIENTS:

  • 6 tablespoons sunflower oil
  • 4 tablespoons distilled white vinegar
  • 1 teaspoon table salt or to taste
  • 1/4 teaspoon ground black pepper or to taste

1. Peel top leaves from cabbage and wash and paper towel pat dry remaining vegetables. Into a large bowl, shred 1 medium green cabbage onto a benriner mandolin. Cut cucumbers into quarters and slice them onto benriner mandolin about 1-2mm thick. Finely chop 4-5 green onions and 1 bunch of fresh dill. Add to the bowl with cabbage.

2. TO MAKE THE DRESSING: In a small bowl, combine and mix together: 6 tbsps sunflower oil, 4 tbsps distilled white vinegar, 1 tsp table salt and 1/4 tsp ground black pepper. Pour the dressing over the salad and gently stir the salad to completely get it covered with the dressing. Refrigerate the salad for at least 2 hours to give it time to absorb the dressing. Taste before serving and add more salt if necessary.
