These Breaded Baked Chicken Drumsticks is what you need to complete your meal. So crunchy on the outside, soft and tender on the inside, beautiful bright color from paprika and a bit of tang from the garlic.
I marinate all of my meats unless I’m running out of time. Marinated meat always tastes better; the meat is more tender and it has the time to absorb the spices and bring out all the flavors. Like these chicken tenderloins – so yum!
These drumsticks are super tasty reheated as well. Toss them onto a lightly oiled skilled over low-medium heat and these will be crunchy again.
My family loves these, and it’s a recipe that works with mashed potatoes, pasta, bread, salad or whatever you want it to work with. You can also double, triple the recipe and serve at holidays or any huge gathering – a chicken drumstick is never a no-no at a party 🙂 …
Breaded Baked Chicken Drumsticks Ingredients:
- 6 chicken drumsticks
- 4 tablespoons mayo (Best Foods Real Mayo)
- 2 garlic cloves
- 1/2 teaspoon salt
- 1/2 teaspoon mild & sweet ground paprika
- 1/4 teaspoon dried coriander
- 1/8 teaspoon red pepper flakes
- 1/16 teaspoon ground black pepper (2 pinches)
- 1/2 cup plain bread crumbs (I used Progresso brand)
Marinate Chicken:
1. Rinse 6 chicken drumsticks in cold water, paper towel dry and remove skins with help of paper towel by grabbing skins and pulling down to bone (you should only have a tiny skin left on). In a medium bowl combine and whisk together: 4 tbsps mayo, 2 peeled and pressed garlic cloves, 1/2 tsp salt, 1/2 tsp paprika, 1/4 tsp dried coriander, 1/8 tsp red pepper flakes and 1/16 tsp ground black pepper.
With help of spoon or silicone brush, apply your mayo mixture onto all sides of the drumsticks. Put into a bowl, cover with plastic food wrap and refrigerate for 8-10 hours (I do overnight) for the drumsticks to absorb the flavors. (these can be refrigerated for up to 2 days before baked)
2. NEXT DAY (or 8-10 hrs later): Preheat oven to 350°F. Line a baking sheet with parchment paper. Place 1/2 cup plain bread crumbs into medium bowl and roll each drumstick into the bread crumbs to fully coat. Transfer breaded drumsticks onto a baking sheet with parchment paper. Bake for 55-60 minutes. Enjoy!!!!

Really flavorful and juicy drumsticks! This recipe was incredibly easy to make ahead. I ended up leaving out the coriander (as my husband and I don’t enjoy cilantro), and added plenty of dill in it’s place. To save on time, I prepped the chicken the evening prior and marinated the drumsticks for about 24 hours, which made them incredibly tender once baked. Thanks Olga for this easy, foolproof recipe!
