Cherry Pizza Pie

Cherry Pizza Pie Recipe:
I absolutely love this Cherry Pizza Pie recipe. It’s so creamy and full of flavor, the topping with cream cheese and cherry brings out insanely delicious taste you can’t resist.
Few years ago, I saw my mom using sweet rolls recipe and making a pizza style pie, and I remember everyone sooo loved it. I always wanted to make it her version. It goes great with a cup of coffee or tea or even by itself, and you cannot stop at just 1 piece.
I divided the recipe into half to get smaller portion as for my little family, half is plenty. It’s simple to make, and I like to have fresh desserts all the time, rather than huge portions standing for days.
Using Bread Machine to Make Dough:
I prepare all or most of my breads’ dough in bread machine because it’s much easier and you get a great mixture and rising. I would wake up, set my machine to mix the dough and have it ready after breakfast to work with. If you don’t have a bread machine, you can definitely make it manually by mixing the dough, cover it for an hour to rise until doubled in size.
I have a great Panasonic Automatic Bread Maker I purchased in 2012. I make bread with it few times per week. My mom and sisters bought the same exact bread machine because I told them how much I love it.
Another important thing to keep in mind is the flour. This recipe calls for 2 cups all-purpose flour, which is plenty of the flour I use, but I know I purchased regular Costco all-purpose flour and it needed at least half cup more. When dough starts mixing, keep an eye to see if there’s enough flour – dough should be smooth but soft, not extremely sticky.
Dough Ingredients:
- 1/2 cup milk (2%)
- 1/2 tablespoon instant yeast
- 2 eggs (1 used for egg wash) room temperature
- 4 tablespoons sugar
- 1/2 teaspoon fine salt
- 1 tablespoon sour cream
- 1 tablespoon grapeseed oil (canola works too)
- 2 cups all-purpose flour (I used Central Milling Company Organic from Costco)
- 2 tablespoons unsalted melted butter
- oil to grease pizza pan
Topping Ingredients:
- 8 oz cream cheese original – room temperature
- 1/2 cup sugar
- 1/4 teaspoon vanilla extract
- 1 canned cherries (21 oz or similar)
How to Make Cherry Pizza Pie:
1. Microwave 1/2 cup 2% milk for 20-25 seconds so it’s warm, but not hot. In a small bowl, whisk together 1 egg, 1/2 cup microwaved milk and 1/2 tbsp instant yeast, just enough to break the egg yolk. Pour into bread machine basket.
2. Microwave 2 tbsp unsalted butter to melt. Continue adding ingredients into bread machine basket – 4 tbsps sugar, 1/2 tsp fine salt, 1 tbsp sour cream, 1 tbsp grapeseed oil and 2 cups all-purpose flour. Pour hot, melted butter over flour. Set machine to ‘dough’ cycle (mine takes 2 hours and 20 minutes, it rests, mixes and rises the dough).
3. Meanwhile, in a medium bowl, combine 1 – 8 oz original cream cheese, 1/2 cup sugar and 1/4 tsp vanilla extract. Stir with spatula to mix, don’t’ worry about undissolved sugar – the oven will do its magic. Set aside. Grease a pizza pan, and flour surface area where you’ll roll out the dough. Take out the dough onto floured surface and deflate it.
Roll the Dough and Add Topping:
4. Roll out the dough to about 1/2½” thick and 1″ diameter bigger than your pan size (my pizza pan is 12”). Because I don’t think anyone can roll out a perfect round circle, cut out edges with pizza cutter and use those pieces to decorate your pie (you can also set aside more dough for more fancy decoration). Transfer dough onto pizza pan. Bend edges to keep the topping in at least 1/2″-1” high. Spread cream cheese mixture evenly. Cover cream cheese evenly with canned cherries. Set the pie aside at room temperature for about 30-40 minutes to rise.
Preheat oven to 350°F. Egg wash edges and any dough decoration on pie. Bake pie for 20-25 minutes or until golden, and toothpick comes out clean when inserted. Let pie cool for at least 30 minutes so that cream cheese and cherries set and thicken, otherwise when you slice the topping will run creating mess. Enjoy!!!
