Apple Blueberry Honey Bread Recipe:

After all the pumpkin and fall baking, let’s take a little break and enjoy something with fruits for a change. The honey, blueberries and apples give a good amount of sweetness to the bread. You don’t want to add too much apple and blueberries though as it will weigh down the bread; apples are pretty heavy with moisture.

This bread is very convenient for last minute guests. It’s one of those anytime recipes that you can have for breakfast, lunch, dinner or as quick snack anytime in the day.

We are using fresh blueberries, but frozen would work too. You can replace the blueberries for nuts, dried berries or completely omit them, but then it’s not really bread if there’s no extra juicy-ness in it! You can even add a bit of cinnamon because we all know that apples and cinnamon are best friends. My husband and kids are not really cinnamon eaters, so I have to stay away from it, but they LOVE honey in any dessert. I’m a huge honey eater myself. When I flip that bottle, I don’t want that drizzle to stop. The more the better! 😀

How to Freeze Apple Blueberry Honey Bread

I slice the bread into 1/2-1” thick slices and wrap each into snack bag. When I want a slice of bread, I thaw a slice overnight in the refrigerator. Next morning, microwave the bread for 10-15 seconds and enjoy with the cup of coffee. For the whole loaf, thaw bread overnight in the refrigerator and allow it to come to room temperature before serving. With the cold days beginning, we all just want to sit by our Christmas tree (which I didn’t put out yet 😀 ) and enjoy that holiday moment. Baking is probably the last thing on your mind. It’s all about baggy sweater, fuzzy slippers, a cup of hot chocolate and a slice of this bread!

Apple Blueberry Honey Bread Ingredients:

  • Large egg – room temperature
  • Sour cream
  • Grapeseed oil (canola or vegetable ok)
  • Honey
  • Granulated sugar
  • Vanilla extract
  • Large granny smith apple – shredded
  • All-purpose flour + 1 tablespoon
  • Baking soda
  • Fine salt
  • Fresh or frozen blueberries (do not thaw)
  • Butter or cooking spray

Preheat the oven to a 350°F. Butter or spray a 9×5 loaf pan. Line a parchment paper with the loaf pan for easier take-out once the bread is baked.

How to Make Apple Blueberry Honey Bread:

1. In a medium bowl, sift, combine and whisk: 1 1/2 cups all-purpose flour, 1 tsp baking soda and 1/2 tsp salt. Set aside.

2. In a separate medium bowl, combine the wet ingredients: 1 egg, 1/2 cup sour cream, 1/3 cup oil, 1/3 cup honey, 1/4 cup sugar, 1 tsp vanilla extract and 1 granny smith apple (grated onto a big hole of grater). Whisk just until combined. Slowly stir in the flour mixture with a spatula into the batter, until ‘just combined’ – do not overmix!

3. In a small bowl, combine and toss together 1 cup blueberries and 1 tbsp all-purpose flour. Gently stir the berries into the batter. You don’t want the berries to let their juices out. The batter will be very thick.

4. Pour the batter into prepared loaf pan and gently go over with a spatula to spread evenly throughout the pan. Bake the bread for 50 minutes or until a wooden pick inserted in center comes out clean. Let the bread cool for 10 mins and then grab the parchment paper on both sides (without burning yourself), and slowly take out the bread onto the cooling rack. Allow bread to cool completely before slicing. Bread stays fresh for up to 3 days at room temperature.
