Roasted Asparagus with Parmesan: an easy and super tasty side dish to any main dish in 20 minutes. We like these with grilled pork, beef, chicken or any salmon dish.
Rinse and paper towel pat dry 12-16 oz asparagus and snap off the ends. (Asparagus ends are fibrous and must be removed before cooking – they snap easily where the fibrous part ends).
Preheat the oven to a 400°F with the rack in the center. Line parchment paper with baking sheet.
Arrange trimmed asparagus on the prepared baking sheet in a single layer.
Drizzle with 1 tbsp olive oil and lightly sprinkle with 1/4 tsp kosher salt and 1/8 tsp ground black pepper. Grate 1/3 cup parmesan cheese over asparagus. Toss asparagus to evenly coat all the spears.
Bake for 12-15 minutes (depending on the thickness of asparagus) until lightly browned, tender and easily pierced with fork. Remove from the oven and serve.
