Roasted Asparagus with Parmesan: an easy and super tasty side dish to any main dish in 20 minutes. We like these with grilled pork, beef, chicken or any salmon dish.

Ingredients

  • 12-16 oz organic asparagus
  • 1 tablespoon extra virgin olive oil (non-virgin okay too)
  • 1/3 cup freshly grated parmesan cheese
  • 1/4 teaspoon kosher salt - or to taste
  • 1/8 teaspoon ground black pepper - or to taste

Instructions

  1. Rinse and paper towel pat dry 12-16 oz asparagus and snap off the ends. (Asparagus ends are fibrous and must be removed before cooking – they snap easily where the fibrous part ends).

  2. Preheat the oven to a 400°F with the rack in the center. Line parchment paper with baking sheet.

  3. Arrange trimmed asparagus on the prepared baking sheet in a single layer.

  4. Drizzle with 1 tbsp olive oil and lightly sprinkle with 1/4 tsp kosher salt and 1/8 tsp ground black pepper. Grate 1/3 cup parmesan cheese over asparagus. Toss asparagus to evenly coat all the spears.

  5. Bake for 12-15 minutes (depending on the thickness of asparagus) until lightly browned, tender and easily pierced with fork. Remove from the oven and serve.
