Lettuce Radish Salad with Lemon Dressing

A super tasty, healthy salad with combination of greens, radish bringing out the red and a bit of tang from the lemon.


  • 1 batch romaine lettuce about 13 leaves
  • 1 English cucumber
  • 20-22 small radishes or a batch of bigger store bought usually there’s about 10
  • 1 pack chives 0.66 oz
  • Dressing Ingredients:
  • 1/3 cup extra virgin olive oil
  • 1 lemon zest
  • 1 lemon squeezed juice about 2 tablespoons
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon ground black pepper


  1. Wash and paper towel pat dry all vegetables. Start by slicing 13 romaine lettuce leaves into half, by cutting out the crunchy stem (usually you would leave it for that extra crunch, but not for this salad). Chop into 1/4” strips.
  2. Using Benriner Mandolin, slice 1 English cucumber into thin circles. Add into bowl with lettuce. Slice all 20-22 radishes onto Benriner Mandolin. (NOTE: make sure you wear kitchen glove as these are small and very easy to cut yourself – go slow). Add sliced radishes to the salad.
  3. Lastly chop 1 pack chives into 1/2” thick and add into bowl with salad. Mix all veggies.
  4. Make Your Salad Dressing: In a small bowl combine: 1/3 cup extra virgin olive oil, zest of 1 lemon, squeezed juice out of 1 lemon, 1/2 tsp fine salt and 1/2 tsp ground black pepper. Mix fully, pour over salad and stir altogether. Serve right away. Enjoy!!!
